Hi there , i felt that i should contribute to this community. Here are some recipes that I have that my grandma and mum passed down to me
first of the recipe instalment is Fried Tamarind Squids
You need:
1) 2 squids cleaned up and sliced into 1 inch thick slices
2)1 packet of tamarind
3)2 tablespoons of caster sugar
4)1 teaspoon of salt
5)1 teaspoon of freshly ground black pepper
6)peanut oil
Garnish:
1)Roughly chopped garlic
2)Coriander
Step 1:
Seperate tamarind seed from pulp , keep the pulp
Step 2 :
Marinade the squid with the pulp, caster sugar,black pepper and salt together , leave it aside for about 1/2 to 1hr
Step 3 :
Deep fry the roughly chopped garlic till it's golden brown then take out and drain
Step 4:
heat up a pan/wok , heat up a teaspoon of peanut oil, then throw the marinated squid in , stir fry on a medium flame, remember to constantly toss the squids as the tamarind pulp would burn and turn bitter,fry till squid immediately turns white.
Step 5:
Dish it up and apply garlic crisps and coriander to garnish
Goes well with beer or some rum .
