hi samantha, welcome to the forum!
the only sharks i have cooked myself have been banjo shark (after we accidentally speared one which we thought was a flounder) and also elephant fish (or elephant shark).
unfortunately in both cases the cooking led to some average results. but i did get some useful tips from other members afterwards. See below:

I believe the run of elephant shark in western port bay is on now.
