Generally I try and use a fish that's about 20cm (8 inches) long on a skewer (tommy rough and mullet are my favorites), but using a fairly big fish won't put them off in my experience. The last few times I've been fishing I've hooked a few fairly large pike (40-45cm), some of which have come up with fairly small squid attached to them (about half the size of the pike). One of them was so hungry that he refused to give up the pike, even when I netted him!
It sounds like your experience was , as you said, 'one of those days' when they want to look but not touch.
