I don't think there is really any special method, and I would definatele leave the tentacles ON. Another way you could do it is by using 2 hooks, one at the bottom of the leader, and one hook snelled about 5-10cm above it (depending on the size of the squid you are using) - place the top hook in the top of the hood (this takes the weight of the bait), and put the bottom hook in the head of the squid with the point well exposed.
I am a huge fan of using squid for bait, and never leave home without some (when I'm leaving home to go fishing that is!). I only use squid for elephants and gummies, and they are also a top snapper bait. I don't think there are many fish that would refuse a fresh piece of squid.
