Gday Jaz,
Couta:
We either fillet, lightly batter and pan fry or we cut it into 10cm lengths and bake in the over with a tomatoe based sauce containing olive oil/herbs/tomatoe/diced onion, with a few potatoes thrown in as well.
Rock Cod:
Makes nice fish soup, even nicer if you have a few other different fish in there as well, like a flathead/gurnard.
I take my hat off to you for showing interest in alternative ways to cooking fish <img src='http://www.squidfish.net/forums/public/style_emoticons/<#EMO_DIR#>/xyxthumbs.gif' class='bbc_emoticon' alt=':th' />
Alot of fish species that people throw back beacuse they are "s$%^ eating" is because they dont lend themselves to the fillet and batter technique <img src='http://www.squidfish.net/forums/public/style_emoticons/<#EMO_DIR#>/rolleyes.gif' class='bbc_emoticon' alt='' /> <img src='http://www.squidfish.net/forums/public/style_emoticons/<#EMO_DIR#>/rolleyes.gif' class='bbc_emoticon' alt='' />
Cheers
AK
