Though you don't get the nice BIG ones here in SEATTLE, but they are good just the same. You do not need to freeze them. Gut them, skin them and chill them in iced cold water for 2-3 hours. As for flavoring .... go with straight soy sauce, soy sauce & WASABI or soy sauce & vinegar. Other ways to eat the critters ... rinse well and get rid of most of the ink and boil the whole thing(tenticles and guts and all) in water, soy sauce & sugar .... it is so good!!! Trust me .... I tell you no lies. By the way, I am JAPANESE and I have been eating SQUID for the last 39 years!!! :japan:
