Glen, as far as I can tell, calamari rings are thinner and have a noticable thinning of flesh on the inside of the hood where the plastic "backbone" normally resides.
Squid rings that are uniform in shape and thickness are usually not calamari. And if they come in a box and are crumbed they have been reconstituted. Well, that's how I tell what calamari is before I eat it.
And, Joe, you are right. Even the Vic markets try to palm off blubber as calamari. I wonder if they ever eat it themselves? <_<
