As mentioned in some posts above, Calamari is actually a type of squid identifiable by its wings which extend the entire length of the cone. Technically, cutting any old squid into rings does not make it Calamari but this has become the most commonly used application for the word.
Real Calamari's higher market value is due to it having superior eating qualities over other varieties of squid ie: it is less rubbery when cooked.
