Help... Salty Squid - Guest - 21-12-2004 my boss recently caught some squid in mexico and brought it back to the office. we all took some home and cooked it up. it was so salty and smelled kind of like bleach. i asked my boss if he had the same experience and he did. however, the people he was staying with in mexico cooked some to and he said it was excellant. any suggestions on why this may be? thanks Help... Salty Squid - aok47 - 21-12-2004 the bleachy smell indicates ammonia which i think means the squid isnt fresh and may have possibly gone off <img src='http://www.squidfish.net/forums/public/style_emoticons/<#EMO_DIR#>/crying.gif' class='bbc_emoticon' alt=':ink' /> AK Help... Salty Squid - Jazman - 21-12-2004 If those squid were caught in Mexico I think there is a good chance that they are humboldt squid - there have been a few threads recently saying that these squid taste salty and/or lemony if cooked using conventional methods, so I think that the locals might have a way of getting rid of this nasty flavour. Someone else had this problem. I hope we get an answer because I now have about 15 steaks in the freezer and I don't have any idea how to cook them without the HORRIBLE lemony-sour flavor coming back! Help...
