Full Version: Cooking Calamari In Oil Question...

Whenever i fry calamari rings in a pan with hot oil i get splattered by oil. Scares the s#$t out of me when i hear the oil go "pop" and cop a bit of hot oil on the hand,... <img src='http://www.squidfish.net/forums/public/style_emoticons/<#EMO_DIR#>/crying.gif' class='bbc_emoticon' alt='Tongue' /> <img src='http://www.squidfish.net/forums/public/style_emoticons/<#EMO_DIR#>/crying.gif' class='bbc_emoticon' alt=':ink' />



Does this happen to anyone else???

Oh yes!! One of the many joys of squid (not) <img src='http://www.squidfish.net/forums/public/style_emoticons/<#EMO_DIR#>/mad.gif' class='bbc_emoticon' alt='Tongue' />

I find the tentacles are the worst when it comes to popping. Many times I have had them pop right out of the pan and onto the floor!

Despite looking like a big tool, I wear oven gloves and an apron at all times when frying squid.

I had been meaning to ask the question but kept forgetting,... i thought it may have been me. After coping a splat on the cheek i have started wearing safety glasses!!



if you dont get inked,... you gotta dodge the oil. I use a splatter guard for frying pan which stops most of the oil but not all <img src='http://www.squidfish.net/forums/public/style_emoticons/<#EMO_DIR#>/whistling.gif' class='bbc_emoticon' alt='Tongue' />



gloves - check

glasses - check

splatter guard - check

Ok,...



Last night i cooked up saturday's calamari catch and managed not to get a single "pop".

The only difference i could think of was that i wasnt allowing the oil to get as hot as last time when i had oil everywhere!



maybe its the temperature of the oil that plays a role <img src='http://www.squidfish.net/forums/public/style_emoticons/<#EMO_DIR#>/wink.gif' class='bbc_emoticon' alt='Wink' />

I have a suggestion - do away with the fryer, and the crumbs and just cook them on the BBQ!!! We lightly roll them in flour first, then straight onto the BBQ - the crumbs take some of the flavour!!
The oil has to be hot but not boiling

Water will cause squid to spit and pop while frying but I have found that you can have the oil too hot
it dun happen 2 me.
Most of the times I get splattered is because the skid was still wet when I got it on the pan.



If properly dried with a rag (and the heads are harder to get dry) isn't to bad to fry... as long the oil is not to hoot of course!

Alot of people I speak to have the same problem but I dont seem to get this

I do get the odd tenticle spit at me but this is normal



Make sure the squid is dry and well floured.

The oil should be hot but not boiling

The deeper the oil the less splatter

Use a anti splatter screen over the top of the frypan, you can by this anywhere they sell pots and stuff
