what is a good number to have and what should be a preference?

Bait or plastics?

Also: which companies online can i buy from?

some asian companies have their pricing in their denomination, what about aus$?

Coleman have various design or you can find them on Ebay.com

there is a few threads about online tackle in the squid fishing gear section.
