I am looking for a recipe that the squid is not deep fried and does not end up gummy or chewy.
i marinate my squid in kiwi fruit juices. this tenderises them enourmously.
I then shallow fry in a non stick pan and extra virgin olive oil.

Just put them few days in the deep freezer. Squid have a lot of water in it and so ice crystals break its structure and is no longer so gummy.
