Ingredients:

1/2 kg squid

1/3 kg potatoes

1 onion

3 pieces of garlic

parsley

4 tablespoons olive oil

1 tablespoon wine vinegar

salt and pepper on request



Treatment:



Cook cleaned squid (put pepper corn in water). Especially cook potatoes in the shell. Cold squid cut in small pieces. Peel potatoes and cut in rings, leave to cool down. Chopped parsley, garlic and onions cut in thin crescents mix with potatoes and squid and add salt, pepper, oil and vinegar. Serve cold.



In a salad you can add fresh tomatoes, cucumbers or other vegetables on request



NOTE : 1 kg is about 2 lb

Do I read this as 'Boil the squid'?



If so, for how long to get it cooked but not tough?



Do you put in cold water & bring to the boil or drop it into boiling water for a short time?



I need to know as I want to try this as it sounds delicious.

Neil, put them in the boiling water and cook 15-30 minutes depending on size. Try occasionally with fork how is soft.
